Executive Chef Claudio Mengoni has built his path through international experience and some of the most important Michelin-starred kitchens in Italy, earning his first star in 2016, renewed in the years since.
At Borgo San Jacopo, his cuisine is direct and sincere, centred on the integrity of ingredients, where precision and creativity come together. A strong focus on sourcing and technique shapes each dish, with flavours, colours and forms that remain clear, recognisable and grounded.
