Born in 1984, Claudio Mengoni has built his career on international experiences and time with Italy’s leading Michelin-starred chefs: Andrea Berton at Trussardi alla Scala**, Gaetano Trovato at Ristorante Arnolfo** and Andrea Migliaccio at L’Olivo**, Capri Palace. He worked at Enoteca Pinchiorri***, Florence, before moving on to Assaje* at Hotel Aldrovandi, Villa Borghese, where he won his first Michelin star in 2016, holding on to it in the years that followed.
Chef Mengoni has now returned to Florence to pass on his philosophy of true, authentic cooking with ingredients which stand out for their uncompromising creativity and rigour. He strives to source the finest ingredients, using complex techniques which are as far removed as possible from abstract, molecular cuisine. He melds together flavours, colours and forms to create memorable dishes with a distinctive taste.
